These Salads Without Lettuce are crisp, colorful, and packed with flavor. Perfect for meal prep or quick lunches without the sogginess of greens.
Ingredients
1 cup cooked quinoa
1 can chickpeas, rinsed
1/2 cup diced cucumber
1/2 cup halved cherry tomatoes
1/4 cup red onion, finely chopped
2 tbsp olive oil
2 tbsp lemon juice
1 tsp garlic powder
Salt & pepper to taste
Fresh parsley (optional)
Instructions
1. Cook quinoa and let it cool.
2. In a large bowl, combine quinoa, chickpeas, cucumber, tomatoes, and onion.
3. In a small bowl, whisk olive oil, lemon juice, garlic powder, salt, and pepper.
4. Pour dressing over salad and toss to combine.
5. Chill for 30 minutes before serving.
6. Top with parsley if desired.
Notes
Swap quinoa for orzo, farro, or couscous.
Add avocado or feta for extra creaminess.
Great as a standalone meal or side dish.
