Description

Ingredients
2 large sweet potatoes, sliced into 1/2-inch rounds
2 tbsp olive oil
Salt and pepper, to taste
1/3 cup crumbled feta cheese
2 tbsp honey
1 tbsp fresh thyme leaves (or rosemary)
Optional: chopped pecans or walnuts for crunch
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Toss sweet potato rounds with olive oil, salt, and pepper.
3. Arrange in a single layer and roast for 25–30 minutes, flipping halfway through, until tender and lightly caramelized.
4. Transfer to a serving platter and top each round with crumbled feta.
5. Drizzle honey over the warm rounds and sprinkle with thyme.
6. Add chopped nuts if desired and serve immediately.
Notes
For extra flavor, try adding a drizzle of balsamic glaze or a touch of chili flakes.
These can be served warm or at room temperature.
