Description
Sweet roasted carrots paired with creamy whipped ricotta, drizzled with honey and sprinkled with herbs — an elegant and simple side dish that’s as beautiful as it is delicious.
Ingredients
1 lb carrots, peeled and cut on the bias (or use rainbow carrots)
2 tbsp olive oil
Salt and pepper, to taste
1 tsp honey (optional)
1/2 tsp chili flakes (optional)
Whipped Ricotta:
1 cup whole milk ricotta
1 tbsp olive oil
1 tsp lemon zest
Salt, to taste
To Serve:
1 tbsp honey, for drizzling
Fresh thyme or parsley, for garnish
Cracked black pepper, to finish
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss carrots with olive oil, salt, and pepper. Spread evenly on the baking sheet.
3. Roast for 20–25 minutes, turning halfway through, until tender and caramelized.
4. While carrots roast, prepare whipped ricotta: combine ricotta, olive oil, lemon zest, and a pinch of salt in a food processor. Blend until smooth and fluffy.
5. Spread whipped ricotta on a serving platter or plate.
6. Arrange roasted carrots on top and drizzle with honey.
7. Sprinkle with fresh thyme, cracked pepper, and chili flakes if desired.
8. Serve warm or at room temperature.
Notes
Add a drizzle of balsamic glaze for extra depth.
Use roasted parsnips or beets alongside the carrots for variety.
