Ingredients

1 lb carrots, peeled and trimmed

1½ tbsp olive oil

½ tsp salt

¼ tsp black pepper

½ tsp smoked paprika (optional)

1 tbsp honey

Whipped Feta:

½ cup feta cheese

¼ cup Greek yogurt or cream cheese

1 tbsp olive oil

1 tsp lemon juice

1 tbsp honey (optional)

Toppings:

1 tbsp chopped pistachios

Fresh thyme or parsley for garnish


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Toss carrots with olive oil, salt, pepper, and smoked paprika.

3. Roast for 20–25 minutes, flipping halfway through, until tender and caramelized.

4. Meanwhile, blend feta, yogurt, olive oil, lemon juice, and honey in a food processor until smooth and creamy.

5. Spread whipped feta onto a serving plate.

6. Top with roasted carrots, drizzle with honey, and sprinkle with pistachios and herbs.

7. Serve warm or at room temperature.

Notes

Use rainbow carrots for a colorful presentation.

Add a sprinkle of chili flakes for a touch of heat.
