Description
Tender roasted carrots drizzled with hot honey and served over a cloud of creamy whipped ricotta a stunning, flavor-packed side dish that’s sweet, spicy, and utterly irresistible.
Ingredients
2 lbs rainbow or regular carrots, peeled and trimmed
2 tbsp olive oil
Salt and pepper, to taste
1 tsp smoked paprika (optional)
1 cup ricotta cheese
1 tbsp lemon juice
1 tbsp honey
1–2 tbsp heavy cream or milk (as needed for texture)
2 tbsp hot honey (store-bought or homemade)
1 tbsp chopped pistachios or walnuts (optional)
Fresh thyme or mint leaves for garnish
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss carrots with olive oil, salt, pepper, and smoked paprika. Spread evenly on the baking sheet.
3. Roast for 25–30 minutes, flipping halfway through, until tender and caramelized.
4. Meanwhile, prepare the whipped ricotta: In a food processor, combine ricotta, lemon juice, honey, and a splash of cream. Blend until smooth and fluffy.
5. Spread whipped ricotta on a serving platter or individual plates.
6. Arrange the roasted carrots on top.
7. Drizzle generously with hot honey and sprinkle with chopped nuts if desired.
8. Garnish with fresh thyme or mint leaves before serving.
Notes
Make your own hot honey by warming 1/4 cup honey with 1–2 tsp chili flakes.
Try adding roasted beets or parsnips for a colorful variation.
