Ingredients
1 cup whole milk ricotta
1/3 cup shelled pistachios, finely chopped
2 tbsp raw honey
1/2 tsp vanilla extract
Pinch of salt
Instructions
1. Drain ricotta if too wet.
2. Toast pistachios if desired and chop finely.
3. Mix ricotta, 1 tbsp honey, vanilla, and salt.
4. Scoop mixture into small bite-sized balls.
5. Roll each ball in crushed pistachios.
6. Drizzle remaining honey over the bites.
7. Chill for 30 minutes before serving.
Notes
Use orange zest or cinnamon for extra flavor.
Try maple syrup or agave as an alternative to honey.
