Ingredients
1 cup whole milk ricotta cheese
2 tbsp honey (plus more for drizzling)
1/2 tsp vanilla extract
1/4 cup finely chopped pistachios
1/2 tsp lemon zest
1/4 cup crushed graham crackers or biscotti (optional, for texture)
Mini phyllo shells or pastry cups (about 12)
Extra chopped pistachios for garnish
Instructions
1. In a medium bowl, mix ricotta, honey, vanilla extract, lemon zest, and crushed graham crackers (if using) until smooth and creamy.
2. Spoon or pipe the ricotta mixture into mini phyllo shells or pastry cups.
3. Top each bite with a sprinkle of chopped pistachios.
4. Drizzle lightly with honey before serving.
5. Chill for 15–20 minutes to allow flavors to meld.
