Ingredients
2 tbsp butter or olive oil
1 shallot, minced
2 cloves garlic, minced
8 oz mushrooms, sliced
1/2 cup dry red wine
1/2 cup beef broth
2 tbsp heavy cream (optional)
Salt & pepper to taste
Instructions
1. Sear seasoned steak in hot skillet; remove and rest.
2. Sauté shallot and garlic in pan until fragrant.
3. Cook mushrooms until golden.
4. Deglaze with red wine, scraping pan bits.
5. Add beef broth and simmer until reduced by half.
6. Stir in cream (optional), simmer until silky.
7. Season with salt and pepper.
8. Serve sauce over sliced steak.

For dairy-free, use coconut cream or ghee.
