Ingredients
24 chocolate sandwich cookies, crushed
5 tbsp melted butter
3 (8 oz) blocks cream cheese, softened
¾ cup granulated sugar
2 tbsp cocoa powder
½ cup sour cream
1 tsp vanilla extract
8 oz dark chocolate, melted and cooled
3 large eggs
Cherry Topping:
2 cups pitted cherries (fresh or frozen)
¼ cup sugar
2 tsp cornstarch mixed with 2 tbsp water
½ tsp vanilla extract
Instructions
1. Preheat oven to 325°F. Line and grease a 9-inch springform pan.
2. Mix crushed cookies and butter, press into pan, and chill.
3. Beat cream cheese until smooth. Add sugar, cocoa, sour cream, vanilla, and melted chocolate.
4. Add eggs one at a time, mixing gently. Pour into crust.
5. Bake 55 minutes until set with slight jiggle. Cool completely.
6. Cook cherries, sugar, cornstarch slurry, and vanilla over medium heat until thick.
7. Chill cheesecake, then top with cherry compote before serving.
Notes
Use parchment to avoid sticking.
Top with shaved chocolate or whipped cream for extra flair.
Let cheesecake chill overnight for best texture.
