Description
Soft, buttery cookies topped with sweet raspberry jam and a golden crumble these Buttery Raspberry Crumble Cookies are a melt-in-your-mouth treat perfect for any occasion.
Ingredients
1 cup unsalted butter, softened
2/3 cup granulated sugar
1 tsp vanilla extract
2 cups all-purpose flour
1/4 tsp salt
1/2 cup raspberry jam (seedless preferred)
2 tbsp brown sugar (for crumble)
2 tbsp butter, melted (for crumble)
1/4 cup flour (for crumble)
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, cream together butter and sugar until light and fluffy.
3. Mix in vanilla extract.
4. Add flour and salt, stirring until a soft dough forms.
5. Scoop 1 1/2 tablespoon portions of dough and roll into balls. Place on baking sheet and press an indentation in the center of each cookie.
6. Fill each indentation with about 1/2 teaspoon raspberry jam.
7. In a small bowl, combine brown sugar, melted butter, and flour to make a crumble mixture. Sprinkle over the tops of the cookies.
8. Bake for 12–14 minutes, until the edges are lightly golden.
9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Swap raspberry jam for strawberry, apricot, or blueberry to change things up.
For a festive touch, drizzle with melted white chocolate once cooled.
Store in an airtight container for up to 5 days or freeze for up to 2 months.
