Description
Chewy, gooey, and delightfully fruity these Raspberry Coconut Magic Bars combine a buttery graham cracker crust with layers of sweetened coconut, white chocolate, and raspberry preserves for a quick and irresistible treat.
Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 cup sweetened shredded coconut
1/2 cup white chocolate chips
1/2 cup chopped almonds or pecans (optional)
1/2 cup raspberry preserves
1 can (14 oz) sweetened condensed milk
Fresh raspberries for garnish (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
2. In a bowl, mix graham cracker crumbs with melted butter until well combined. Press evenly into the bottom of the prepared pan.
3. Sprinkle shredded coconut evenly over the crust, followed by white chocolate chips and nuts (if using).
4. Warm raspberry preserves slightly and drizzle over the top.
5. Pour sweetened condensed milk evenly over all the layers.
6. Bake for 25–30 minutes or until edges are golden brown and center is set.
7. Cool completely, then refrigerate for at least 1 hour before slicing into bars.
8. Garnish with fresh raspberries before serving, if desired.
Notes
Substitute raspberry jam with strawberry or cherry preserves for a different twist.
Bars can be stored in an airtight container at room temperature for 3 days or refrigerated up to 1 week.
For easier cutting, chill bars well before slicing.
