This vibrant homemade Rainbow Sherbet is a fruity, creamy, and colorful dessert made with fresh fruit purées and simple ingredients perfect for summer fun.
Ingredients
1 cup chopped strawberries
1 cup chopped mango or oranges
1 cup chopped kiwi or lime juice
1 1/2 cups full-fat Greek yogurt or coconut cream
1/2 cup honey or maple syrup
1 tbsp lemon juice
1 tsp vanilla extract
Instructions
1. Blend each fruit with 1/2 cup yogurt, 2 tbsp sweetener, and a splash of lemon juice.
2. Chill fruit mixtures in fridge for 30 minutes.
3. Churn or freeze each fruit layer individually.
4. Once frozen, blend again until creamy.
5. Layer each flavor in a loaf pan.
6. Freeze 3 more hours before serving.
Notes
You can substitute the fruits to fit what’s in season.
For vegan, use full-fat coconut cream.
To reduce sugar, add more ripe fruit and less sweetener.
