  • Total Time: 45 minutes
  • Yield: 8 servings 1x
  • Diet: Vegetarian

Description

A warm and sweet breakfast casserole that combines fluffy bread, creamy custard, and tart blueberries for a delightful morning treat.

Ingredients

Scale
  • 1 loaf of bread, cubed
  • 2 cups blueberries (fresh or frozen)
  • 6 large eggs
  • 2 cups milk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish to ensure your casserole doesn’t stick.
  2. Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt until well combined.
  3. Add the cubed bread and blueberries to the egg mixture, gently folding everything together.
  4. Pour the mixture into your prepared baking dish, spreading it out evenly.
  5. Bake the casserole for 30-35 minutes until the top is lightly golden and the mixture is set.
  6. Let it cool for a few minutes before serving.
  7. Serve warm and dust individual portions with powdered sugar.

Notes

Use day-old bread for best results. Allow the casserole to sit in the fridge overnight for better absorption of the custard.
