Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1 cup unsalted butter, room temperature
3/4 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 cup pumpkin puree
2 tablespoons espresso powder dissolved in 2 tbsp hot water
2 teaspoons vanilla extract
Instructions
1. Preheat oven to 350°F and line baking sheets with parchment paper.
2. In medium bowl, whisk together flour, baking soda, salt, and all spices until combined.
3. Dissolve espresso powder in 2 tablespoons hot water and set aside to cool.
4. In large bowl, cream butter with both sugars until light and fluffy, about 3-4 minutes.
5. Add eggs one at a time, beating well after each addition.
6. Mix in pumpkin puree, espresso mixture, and vanilla until just combined.
7. Gradually add flour mixture to wet ingredients, mixing until just combined—don’t overmix.
8. Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart.
9. Bake 10-12 minutes until edges are lightly set but centers still look slightly underbaked.
10. Cool on baking sheets for 5 minutes before transferring to wire racks.
11. Store completely cooled cookies in airtight containers up to 1 week.
Notes
Don’t overbake – cookies should look slightly underdone when removed for soft texture.
Use room temperature ingredients for proper creaming and even mixing.
Dissolve espresso powder completely to prevent gritty texture in final cookies.
Freeze baked cookies up to 3 months or freeze cookie dough balls for fresh-baked treats.
