1 large egg yolk

1/2 teaspoon vanilla extract


Instructions

1. Preheat oven to 375°F and line 12-cup muffin tin with paper liners.

2. In large bowl, whisk together flour, baking soda, baking powder, salt, and all spices.

3. In separate bowl, beat together sugar, oil, eggs, pumpkin puree, and water until smooth.

4. For cream cheese swirl: beat cream cheese, sugar, egg yolk, and vanilla until completely smooth.

5. Pour wet ingredients into dry ingredients and fold gently just until combined.

6. Fill muffin cups 2/3 full with batter.

7. Add 1 tablespoon cream cheese mixture to center of each muffin.

8. Use toothpick to create gentle swirl pattern through batter.

9. Bake 18-22 minutes until tops spring back when lightly touched.

10. Cool in pan 5 minutes, then transfer to wire rack.
