Incredibly simple 2-ingredient Pumpkin Fudge that delivers rich, creamy fall flavor without any complicated candy-making techniques. Perfect for beginners and busy schedules!
Ingredients
1 cup pure pumpkin puree (not pumpkin pie filling)
2 cups high-quality white chocolate chips
Optional: 1/2 teaspoon ground cinnamon
Optional: 1/4 teaspoon vanilla extract
Optional: Pinch of salt
Instructions
1. Line an 8×8 inch pan with parchment paper, leaving overhang for easy removal.
2. Microwave white chocolate chips in 30-second intervals, stirring between each cycle until completely smooth.
3. Gradually fold pumpkin puree into melted chocolate, stirring constantly until completely combined.
4. Add optional seasonings if desired and mix until smooth.
5. Pour mixture into prepared pan and spread evenly with spatula.
6. Refrigerate for at least 2 hours until firm.
7. Lift from pan using parchment overhang and cut into squares.
8. Store covered in refrigerator for up to one week.
