Description
These pumpkin crispy treats transform classic rice cereal treats with warm autumn spices and real pumpkin puree. A perfect no-bake fall dessert that’s ready in just 15 minutes.
Ingredients
6 cups crispy rice cereal
4 cups mini marshmallows
1/2 cup pumpkin puree
3 tablespoons butter
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon ground allspice
Orange food coloring (optional)
Cooking spray for pan
Instructions
1. Line 9×13-inch pan with parchment paper and spray with cooking spray.
2. Measure all ingredients before starting the cooking process.
3. Melt butter in large saucepan over low heat.
4. Add mini marshmallows and stir constantly until completely smooth.
5. Remove from heat immediately when marshmallows are melted.
6. Quickly stir in pumpkin puree, all spices, vanilla, and salt.
7. Add orange food coloring if desired for deeper color.
8. Add rice cereal and stir quickly until evenly coated.
9. Press mixture firmly into prepared pan using buttered hands.
10. Cool completely at room temperature for 30 minutes.
11. Cut into squares with sharp knife for clean edges.
Notes
Drain pumpkin puree well to prevent soggy texture.
Work quickly once marshmallows are melted.
Don’t refrigerate – this makes treats hard.
Store covered at room temperature up to 5 days.
Use buttered hands to prevent sticking during pressing.
