Creamy Mustard Roasted Potatoes crispy-on-the-outside, tender-on-the-inside potatoes tossed in a tangy, creamy mustard sauce with garlic and herbs. The perfect side dish for roasted meats or a hearty vegetarian meal.
Ingredients
2 lbs (900g) baby potatoes, halved
2 tbsp olive oil
Salt and black pepper, to taste
1/3 cup mayonnaise (or Greek yogurt)
2 tbsp Dijon mustard
1 tbsp whole grain mustard
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp chopped fresh parsley or dill
1 tsp honey (optional, to balance the tang)
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
2. Toss halved potatoes with olive oil, salt, and pepper until evenly coated.
3. Spread in a single layer and roast for 25–30 minutes, flipping halfway through, until golden and crispy.
4. Meanwhile, in a small bowl, whisk together mayonnaise, Dijon mustard, whole grain mustard, garlic, lemon juice, and honey until smooth.
5. Once potatoes are done, transfer them to a large mixing bowl.
6. Add the mustard sauce and toss gently until all potatoes are well coated.
7. Sprinkle with fresh parsley or dill before serving.
8. Serve warm as a side dish or at room temperature for picnics and gatherings.
Notes
Substitute Greek yogurt for mayonnaise for a lighter version.
Add chopped bacon or caramelized onions for extra flavor.
These potatoes pair beautifully with grilled chicken, steak, or salmon.
Double the mustard sauce and drizzle some over vegetables or roasted cauliflower.
