Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 tsp almond extract (optional)
2 cups all-purpose flour
1/2 cup finely ground pistachios
1/4 tsp salt
Filling:
1/2 cup pistachio cream (store-bought or homemade)
2 tbsp mascarpone or cream cheese (optional, for extra creaminess)
Powdered sugar, for dusting
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together butter and powdered sugar until light and fluffy.
3. Mix in vanilla and almond extracts.
4. Add flour, ground pistachios, and salt, mixing until a soft dough forms.
5. Scoop teaspoon-sized portions, roll into balls, and flatten slightly on the baking sheet.
6. Bake for 10–12 minutes, or until edges are just lightly golden.
7. Cool completely on a wire rack.
8. For the filling, mix pistachio cream with mascarpone or cream cheese until smooth.
9. Spread about 1 teaspoon of filling on the flat side of one cookie, then sandwich with another.
10. Dust with powdered sugar before serving.
