Description
Sweet and salty pistachio cookies with a touch of honey, crisp edges and chewy centers bake ready in under 30 minutes!
Ingredients
1/2 cup unsalted butter, softened
1/2 cup sugar
1/4 cup honey
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup chopped roasted pistachios
Instructions
1. Preheat oven to 350°F.
2. Line a baking sheet with parchment.
3. Cream butter, sugar, and honey.
4. Add egg and vanilla.
5. Mix flour, baking soda, and salt in another bowl.
6. Combine dry and wet ingredients.
7. Fold in pistachios.
8. Scoop onto sheet and bake 10-12 minutes.
9. Cool for 5 minutes before transferring.
Notes
Don’t overbake or cookies will dry out.
Store in airtight container.
Freeze dough balls for quick baking later.
