Description

A tropical twist on a classic dessert these Pineapple Upside Down Sugar Cookies feature buttery caramelized pineapple and cherries baked into soft, golden sugar cookies for a fun, bite-sized treat.


Ingredients

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg

1 tsp vanilla extract

1 1/2 cups all-purpose flour

1/2 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

1/4 cup brown sugar

2 tbsp melted butter (for topping)

6 pineapple rings, cut into small pieces

6 maraschino cherries, halved


Instructions

1. Preheat oven to 350°F (175°C) and lightly grease a muffin pan.

2. In a small bowl, mix brown sugar and melted butter. Spoon about 1 teaspoon of the mixture into the bottom of each muffin cup.

3. Place a few small pineapple pieces and half a cherry on top of the brown sugar mixture.

4. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.

5. Add egg and vanilla, mixing until well combined.

6. In another bowl, whisk flour, baking powder, baking soda, and salt.

7. Gradually add dry ingredients to wet ingredients until a soft dough forms.

8. Roll dough into tablespoon-sized balls and place one on top of the pineapple in each muffin cup, flattening slightly.

9. Bake for 12–15 minutes, until edges are lightly golden.

10. Cool for 5 minutes, then carefully invert the pan onto a wire rack to release the cookies.

11. Let cool completely before serving.

Notes

For an extra caramel flavor, drizzle with a little caramel sauce before serving.

Use fresh pineapple chunks if desired — just be sure to pat them dry.

Store in an airtight container at room temperature for up to 3 days.
