Description

Pineapple Cucumber Salad Fresh is a refreshing and sweet side dish made with juicy pineapple, crisp cucumbers, lime, and cilantro perfect for summer meals.


Ingredients

Scale

2 cups fresh pineapple chunks

2 medium cucumbers, thinly sliced

¼ red onion, finely sliced

¼ cup chopped fresh cilantro

Juice of 1 lime

1 tbsp honey or agave (optional)

Salt & pepper to taste

Chili flakes or sliced jalapeño (optional)


Instructions

1. Wash and dry all produce.

2. Cut pineapple and cucumbers into bite-size pieces.

3. Soak red onion slices in cold water for 5 minutes.

4. In a large bowl, combine pineapple, cucumber, onion, and cilantro.

5. Drizzle lime juice and honey over the mixture.

6. Add salt and pepper to taste, toss gently.

7. Let salad rest for 10–15 minutes before serving.

Notes

For a spicier version, add chili flakes or jalapeños.

Best served fresh. You can refrigerate up to 2 days.
