  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine diced pineapple, olive oil, lime juice, chili powder, salt, and pepper.
  3. Coat the chicken breasts with olive oil and season them generously with salt and pepper.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  5. Once done, remove the chicken from the grill and let it rest for a few minutes before slicing.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. Assemble the tacos by adding sliced chicken and the pineapple mixture into each tortilla.
  8. Garnish with fresh cilantro and serve with lime wedges.

Notes

Allow the chicken to rest before slicing to retain juices. Choose ripe pineapple for the best flavor.
