- 2 chicken breasts
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 small corn tortillas
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine diced pineapple, olive oil, lime juice, chili powder, salt, and pepper.
- Coat the chicken breasts with olive oil and season them generously with salt and pepper.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
- Once done, remove the chicken from the grill and let it rest for a few minutes before slicing.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by adding sliced chicken and the pineapple mixture into each tortilla.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
Allow the chicken to rest before slicing to retain juices. Choose ripe pineapple for the best flavor.
