- 2 chicken breasts, grilled and sliced
- 1 cup fresh pineapple, diced
- 1/2 red onion, diced
- 1 red bell pepper, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper to taste
- 8 small corn tortillas
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with salt and pepper and grill until fully cooked and juices run clear, about 6-7 minutes per side.
- Remove the chicken from the grill, let it rest for a few minutes, and then slice it.
- In a bowl, combine diced pineapple, red onion, red bell pepper, cilantro, lime juice, salt, and pepper to make the salsa.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
