- 2 chicken breasts
- 1 cup fresh pineapple, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
Instructions
- Preheat your grill to medium-high heat.
- In a mixing bowl, combine the olive oil, chili powder, garlic powder, salt, and pepper.
- Coat the chicken breasts with the marinade.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked with grill marks.
- During the last few minutes of grilling, toss the diced pineapple onto the grill until caramelized.
- Remove chicken and pineapple from the grill; let the chicken rest before slicing into bite-size pieces.
- Assemble the tacos with grilled chicken, grilled pineapple, diced red onion, and fresh cilantro onto each tortilla.
- Serve with lime wedges.
