  • 8 small corn or flour tortillas
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, combine the olive oil, chili powder, garlic powder, salt, and pepper.
  3. Coat the chicken breasts with the marinade.
  4. Grill the chicken for about 6-7 minutes on each side, or until fully cooked with grill marks.
  5. During the last few minutes of grilling, toss the diced pineapple onto the grill until caramelized.
  6. Remove chicken and pineapple from the grill; let the chicken rest before slicing into bite-size pieces.
  7. Assemble the tacos with grilled chicken, grilled pineapple, diced red onion, and fresh cilantro onto each tortilla.
