A savory and hearty vegetable lasagna filled with layers of fresh vegetables, ricotta, and mozzarella cheese.
Ingredients

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach, fresh
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups marinara sauce
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions, then drain and layer on a towel.
- Heat olive oil in a pan, then sauté onions and garlic until fragrant.
- Add zucchini, bell pepper, and spinach, and cook until tender.
- Mix the sautéed vegetables with ricotta cheese, basil, oregano, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer three lasagna noodles, followed by half of the ricotta mixture and a third of the mozzarella.
- Repeat the layers, finishing with noodles, marinara sauce, and remaining mozzarella and Parmesan on top.
- Bake in the oven for 45 minutes or until golden and bubbly.
- Let cool for 10 minutes before slicing and serving.
