Description

A delicious and hearty homemade vegetable lasagna, perfect for a family dinner.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup mushrooms, sliced
  • 2 cups spinach, chopped
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the onion and garlic; sauté until softened.
  5. Stir in bell pepper, zucchini, mushrooms, and spinach; cook until vegetables are tender.
  6. Mix ricotta cheese, oregano, salt, and black pepper in a bowl.
  7. Spread a layer of marinara sauce at the bottom of a baking dish.
  8. Layer 3 lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, and a layer of mozzarella cheese.
  9. Repeat the layers, ending with a layer of noodles and marinara sauce topped with mozzarella.
  10. Bake in preheated oven for 30-35 minutes until bubbling and golden.
  11. Let cool for 10 minutes before serving.

Notes

For added flavor, you can sprinkle some fresh basil before serving.
