Ingredients
1 lb thinly sliced ribeye or sirloin
1 tbsp olive oil
1 onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
3 cloves garlic, minced
4 cups beef broth
8 oz cream cheese
1 cup shredded provolone
Salt & black pepper to taste
Instructions
1. Heat olive oil in a large pot and sauté onions, peppers, and garlic.
2. Add thinly sliced beef, sear lightly, then pour in beef broth.
3. Simmer on medium heat for 20 minutes.
4. Stir in cream cheese and shredded provolone until melted and creamy.
5. Season with salt and pepper.
6. Let soup rest covered for 5 minutes before serving.
Notes
For a spicy kick, add jalapeños or chipotle peppers.
To make it vegetarian, substitute mushrooms for beef.
Best served with crusty bread or garlic toast.
