Description
Creamy cheesecake and fresh peach layers meet in these easy, buttery cobbler bars the ultimate summer dessert.
Ingredients
2 cups fresh peaches (peeled & sliced)
1 tbsp lemon juice
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup brown sugar
1/2 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
1/2 cup cold unsalted butter (cubed)
4 oz cream cheese (softened)
1/4 cup granulated sugar
1/2 tsp vanilla extract
1 egg yolk
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13 inch pan with parchment.
2. In a bowl, combine flour, oats, brown sugar, cinnamon, baking powder, and salt.
3. Cut in butter until crumbly. Reserve 1/3 of mixture.
4. Press 2/3 of mixture into bottom of pan to form crust.
5. In a small bowl, mix cream cheese, sugar, vanilla, and egg yolk until smooth.
6. Spread cheesecake mixture over crust.
7. Toss peaches with lemon juice. Layer peaches on top of cheesecake.
8. Sprinkle remaining crust mixture over the top.
9. Bake for 35–40 minutes until golden brown.
10. Cool completely before slicing.
Notes
Use canned peaches (drained) when fresh are not in season.
Bars taste even better the next day once flavors set.
For gluten-free, use a 1:1 GF flour blend.
