A savory twist on a comfort classic this Parmesan Chicken Meatloaf combines juicy ground chicken with herbs, garlic, and cheese for a moist and flavorful dinner that’s perfect with marinara or roasted vegetables.
Ingredients
1 1/2 lbs ground chicken
1/2 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup milk
1 egg
2 cloves garlic, minced
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded mozzarella (optional)
1/2 cup marinara sauce (for topping)
Fresh parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, milk, egg, garlic, Italian seasoning, salt, and pepper.
3. Mix gently until just combined (do not overmix).
4. Transfer mixture to the prepared pan and shape into a loaf.
5. Top with marinara sauce and, if desired, sprinkle with mozzarella cheese.
6. Bake for 40–45 minutes, or until internal temperature reaches 165°F (74°C).
7. Let rest for 5–10 minutes before slicing.
8. Garnish with fresh parsley and serve with extra sauce if desired.
Notes
Try adding chopped spinach or sun-dried tomatoes for extra flavor.
For a crispy crust, broil the top for 2–3 minutes at the end.
