A flavorful twist on classic meatloaf this Parmesan Chicken Meatloaf is juicy, cheesy, and seasoned with Italian herbs for a comforting meal that’s easy enough for weeknights yet elegant enough to impress.
Ingredients
1 1/2 lbs ground chicken
1/2 cup grated Parmesan cheese
1/2 cup Italian breadcrumbs
1/2 cup milk
1 egg, beaten
2 garlic cloves, minced
1 tsp Italian seasoning
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded mozzarella cheese (optional, for inside)
1/2 cup marinara sauce (plus more for topping)
1 tbsp olive oil
Fresh basil or parsley for garnish
Instructions
1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
2. In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, milk, egg, garlic, Italian seasoning, onion powder, salt, and pepper.
3. Mix until just combined — do not overmix to keep it tender.
4. If desired, add shredded mozzarella to the center for a cheesy surprise.
5. Transfer mixture to the prepared loaf pan and shape into a loaf.
6. Brush the top with olive oil and spread 1/2 cup marinara sauce over it.
7. Bake for 45–50 minutes, or until internal temperature reaches 165°F (74°C).
8. Let rest for 5–10 minutes before slicing.
9. Garnish with fresh basil or parsley and serve with extra marinara sauce.
Notes
Serve with mashed potatoes, roasted veggies, or a green salad for a complete meal.
Substitute ground turkey for a leaner version.
