Description
Crispy, golden cabbage steaks roasted with garlic and herbs an easy, healthy side or main dish that’s naturally vegan and gluten-free.
Ingredients
1 medium green cabbage
¼ cup olive oil
4 garlic cloves, minced
1 tsp smoked paprika
½ tsp sea salt
½ tsp black pepper
Optional: lemon zest, chopped parsley
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet.
2. Slice cabbage into ¾-inch thick rounds.
3. Mix olive oil, garlic, paprika, salt, and pepper.
4. Brush both sides of cabbage with garlic oil mixture.
5. Place on baking sheet and roast for 25 minutes, flipping halfway.
6. Broil 2–3 minutes for extra crispiness if desired.
7. Let rest 5 minutes before serving.
Notes
Use red cabbage for a sweeter variation.
Sprinkle with parmesan or lemon juice before serving.
Pairs well with mashed potatoes or lentils.
