- 1½ pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- 12 ounces uncooked penne or rigatoni
- 3 cups chicken broth
- 1 cup heavy cream
- ¾ cup sun-dried tomatoes, drained and chopped
- 2 cups baby spinach
- 1 cup grated Parmesan cheese
- Fresh basil or parsley, for garnish
Instructions
- Heat the olive oil in a large pot or deep skillet over medium-high heat.
- Season the chicken with salt and pepper, cook it until browned and cooked through, then set aside.
- Add minced garlic, Italian seasoning, and red pepper flakes to the pot; sauté for 1 minute until fragrant.
- Stir in uncooked pasta, chicken broth, and heavy cream; bring to a boil and then reduce to a simmer.
- Cover the pot and cook for 12–15 minutes, stirring occasionally, until the pasta is al dente.
- Mix in sun-dried tomatoes, baby spinach, and cooked chicken; simmer for another 2–3 minutes until heated through.
- Remove the pot from heat and stir in Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh basil or parsley.
Notes
For a vegetarian option, swap the chicken for chickpeas or mushrooms. Adjust seasonings to your taste.
