Ingredients

  • 2 tablespoons olive oil
  • pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • 12 ounces uncooked penne or rigatoni
  • 3 cups chicken broth
  • 1 cup heavy cream
  • ¾ cup sun-dried tomatoes, drained and chopped
  • 2 cups baby spinach
  • 1 cup grated Parmesan cheese
  • Fresh basil or parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot or deep skillet over medium-high heat.
  2. Season the chicken with salt and pepper, cook it until browned and cooked through, then set aside.
  3. Add minced garlic, Italian seasoning, and red pepper flakes to the pot; sauté for 1 minute until fragrant.
  4. Stir in uncooked pasta, chicken broth, and heavy cream; bring to a boil and then reduce to a simmer.
  5. Cover the pot and cook for 12–15 minutes, stirring occasionally, until the pasta is al dente.
  6. Mix in sun-dried tomatoes, baby spinach, and cooked chicken; simmer for another 2–3 minutes until heated through.
  7. Remove the pot from heat and stir in Parmesan cheese until melted and creamy.
  8. Serve hot, garnished with fresh basil or parsley.

Notes

For a vegetarian option, swap the chicken for chickpeas or mushrooms. Adjust seasonings to your taste.
