Description

A delightful one-pan meal featuring juicy chicken, colorful veggies, and cheesy tortellini, all coated in fragrant basil pesto.


Ingredients

  • 2 chicken breasts
  • 1 cup tortellini
  • 1 cup asparagus, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pesto sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden, about 6-7 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. Add the asparagus and cherry tomatoes to the same skillet. Cook for about 3-4 minutes until they start to soften.
  5. Stir in the tortellini and pesto sauce, mixing everything well. Return the chicken to the skillet.
  6. Cook everything together for an additional 5 minutes or until heated through.
  7. Serve warm and enjoy!

Notes
