- 2 chicken breasts
- 1 cup tortellini
- 1 cup asparagus, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup pesto sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside.
- Add the asparagus and cherry tomatoes to the same skillet. Cook for about 3-4 minutes until they start to soften.
- Stir in the tortellini and pesto sauce, mixing everything well. Return the chicken to the skillet.
- Cook everything together for an additional 5 minutes or until heated through.
- Serve warm and enjoy!
Notes
Consider adding grated Parmesan cheese on top before serving for extra flavor. Pair with a light arugula salad or crusty bread.
