- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic, minced
- 2 tablespoons Soy Sauce
- 1 each Bell Peppers (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat your oven to 400°F (200°C).
- Drizzle olive oil across the baking sheet.
- Chop kielbasa into bite-sized pieces and toss onto the baking sheet with bell peppers, baby carrots, and halved baby potatoes.
- Mix honey, minced garlic, and soy sauce in a small bowl, then pour over the kielbasa and veggies, tossing to coat.
- Spread everything out evenly on the baking sheet.
- Roast in the oven for about 20-25 minutes, tossing halfway through.
- When veggies are tender and kielbasa is caramelized, remove from oven and sprinkle with fresh parsley or green onions.
