Description

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a medium bowl, mix the rolled oats, flour, baking soda, and salt until combined.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just combined—don’t overmix!
  6. Stir in the chocolate chips until evenly distributed.
  7. Spread the batter evenly into the prepared baking pan, smoothing the top as needed.
  8. Bake for 20-25 minutes or until the edges turn lightly golden. The center may look slightly soft, but it will firm up as it cools.
  9. Allow to cool in the pan before cutting into bars. Enjoy your soft and chewy cookie bars!

Notes

For a thicker bar, chill the dough for about 30 minutes before baking. Store in an airtight container for 3-5 days or freeze for up to 3 months.
