- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a medium bowl, mix the rolled oats, flour, baking soda, and salt until combined.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually mix in the dry ingredients until just combined—don’t overmix!
- Stir in the chocolate chips until evenly distributed.
- Spread the batter evenly into the prepared baking pan, smoothing the top as needed.
- Bake for 20-25 minutes or until the edges turn lightly golden. The center may look slightly soft, but it will firm up as it cools.
- Allow to cool in the pan before cutting into bars. Enjoy your soft and chewy cookie bars!
Notes
For a thicker bar, chill the dough for about 30 minutes before baking. Store in an airtight container for 3-5 days or freeze for up to 3 months.
