- 1 cup rolled oats
- 1 cup applesauce
- 1 ripe banana, mashed
- 1/2 cup milk (or non-dairy milk)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 cup honey or maple syrup (optional)
- 1/2 cup diced apples
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
- Combine the rolled oats, applesauce, mashed banana, milk, baking powder, cinnamon, and the sweetener if you’re using it in a mixing bowl. Stir until well mixed.
- Gently fold in the diced apples to ensure they’re dispersed throughout the batter.
- Spoon the batter into your prepared muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes before transferring them to a wire rack. Serve warm or store in an airtight container.
