Ingredients

  • 1 cup applesauce
  • 1 ripe banana, mashed
  • 1/2 cup milk (or non-dairy milk)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 cup honey or maple syrup (optional)
  • 1/2 cup diced apples

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
  2. Combine the rolled oats, applesauce, mashed banana, milk, baking powder, cinnamon, and the sweetener if you’re using it in a mixing bowl. Stir until well mixed.
  3. Gently fold in the diced apples to ensure they’re dispersed throughout the batter.
  4. Spoon the batter into your prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool for a few minutes before transferring them to a wire rack. Serve warm or store in an airtight container.
