These No Bake Peanut Butter Granola Cups combine natural peanut butter, rolled oats, honey, and mini chocolate chips for protein-packed snacks that require no baking. Perfect for meal prep and on-the-go energy.


Ingredients

2 cups rolled oats

1 cup natural peanut butter

1/2 cup honey or maple syrup

1/2 cup mini dark chocolate chips

1/4 cup ground flaxseed

1/4 cup chia seeds

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

Mini muffin tin liners


Instructions

1. Line mini muffin tin with paper or silicone liners

2. Warm peanut butter in microwave for 15-20 seconds until easily stirrable

3. Measure all dry ingredients (oats, flaxseed, chia seeds, cinnamon, salt) into large mixing bowl

4. In separate bowl, combine warm peanut butter, honey, and vanilla until smooth

5. Pour wet ingredients over dry ingredients and mix thoroughly until evenly coated

6. Add mini chocolate chips and fold in gently

7. Test mixture by pressing small amount together – should hold shape without crumbling

8. Press mixture firmly into prepared mini muffin cups, filling completely and packing down well

9. Refrigerate for at least 30 minutes until set and firm

10. Remove from molds and store in airtight container

11. Keep refrigerated for up to 1 week or freeze for up to 3 months

Notes

Use natural peanut butter with only peanuts and salt for best results.

Warm peanut butter slightly for easier mixing and smoother texture.

Press mixture firmly into molds to prevent crumbling.

For vegan version, substitute honey with maple syrup or agave.
