Ingredients
For the Orange Creamsicle Filling:
8 ounces cream cheese, room temperature
4 tablespoons unsalted butter, room temperature
2 cups powdered sugar, sifted
2 teaspoons fresh orange zest
2 tablespoons fresh orange juice
½ teaspoon pure vanilla extract
Pinch of sea salt
For the Chocolate Coating:
1.5 pounds milk chocolate chips (or white, dark, or semi-sweet)
1 tablespoon coconut oil or vegetable oil
Optional Toppings:
Sprinkles, chopped pistachios, edible gold leaf, cocoa powder, sea salt flakes
Instructions
1. Remove cream cheese from refrigerator 30-45 minutes before starting to reach room temperature.
2. Cut softened cream cheese into small cubes and place in a large mixing bowl.
3. Grate fresh orange zest directly into the bowl with cream cheese.
4. Using electric mixer or fork, beat cream cheese on medium speed 2-3 minutes until completely smooth.
5. Add room-temperature butter and beat 1-2 minutes until fully incorporated and light and fluffy.
6. Gradually add sifted powdered sugar ½ cup at a time, beating on low speed after each addition.
7. Once all sugar is incorporated, add fresh orange juice, vanilla extract, and sea salt.
8. Mix on low speed just until evenly combined—do not overmix.
9. If filling is too soft, refrigerate 20-30 minutes until firm enough to scoop.
10. Using a cookie scoop or small melon baller, portion filling into balls approximately ¾ inch diameter.
11. Roll each portion between your palms into smooth spheres, working quickly.
12. Place shaped truffles on a parchment-lined baking sheet with 1 inch space between each.
13. Freeze for at least 1 hour until very firm (or minimum 30 minutes for quicker preparation).
14. Melt milk chocolate chips with coconut oil in a double boiler or microwave in 30-second intervals.
15. Stir chocolate between intervals until completely smooth. Temperature should be 86-90°F.
16. Working quickly, dip each frozen truffle into melted chocolate using a fork.
17. Rotate to coat all sides. Allow excess chocolate to drip back into bowl.
18. Transfer coated truffle to a clean parchment-lined baking sheet.
19. Add desired toppings immediately while chocolate is still wet and tacky.
20. Refrigerate all coated truffles until chocolate sets completely, 20-30 minutes.
21. Transfer finished No-Bake Orange Creamsicle Truffles to airtight container.
22. Keep refrigerated and serve chilled for best flavor and texture.
Notes
Room temperature cream cheese is absolutely critical—cold cream cheese creates grainy filling.
Do not overmix filling once sugar is added, as overmixing can break emulsion.
Fresh orange juice and zest provide superior flavor to bottled or concentrate.
Properly frozen truffles are much easier to coat and produce better appearance.
Chocolate should be warm (86-90°F) but not hot—use candy thermometer to check.
Double boiler melts chocolate more gently than microwave without scorching.
If chocolate cracks during coating, add 1 teaspoon coconut oil and stir gently.
Store refrigerated in airtight container up to 1 week, or freeze up to 2 months.
Never leave at room temperature more than 1-2 hours, or filling will soften.
For gift-giving, arrange in decorative boxes with parchment between layers.
Lemon, lime, or grapefruit juice creates delicious citrus variations.
For dairy-free: use cashew cream and plant-based butter and chocolate.
Naturally gluten-free and keto-friendly if using sugar substitutes.
