Description
No-Bake Cinnamon Roll Truffles deliver all the warm, comforting flavors of classic cinnamon rolls in bite-sized form without any baking required. These creamy, sweet truffles are made with cream cheese, graham crackers, and cinnamon, then coated in smooth white chocolate for an irresistible treat that’s ready in just 25 minutes.
Ingredients
8 oz cream cheese, softened to room temperature
2 cups graham cracker crumbs (about 15–16 full crackers, finely crushed)
2 cups powdered sugar
2 tablespoons ground cinnamon
1 teaspoon pure vanilla extract
¼ teaspoon salt
10 oz white chocolate melting wafers or chips
1 tablespoon coconut oil
Optional: cinnamon-sugar for sprinkling
Instructions
1. Beat softened cream cheese in a large bowl until smooth and fluffy, about 1 minute.
2. Add powdered sugar, ground cinnamon, vanilla extract, and salt to the cream cheese. Mix until completely combined and smooth.
3. Gradually fold in graham cracker crumbs, mixing until a thick, cohesive dough forms that holds its shape.
4. If mixture is too soft, cover and refrigerate for 10 minutes until firm enough to roll.
5. Using a small cookie scoop (1 tablespoon size), scoop mixture and roll between your palms into smooth balls.
6. Place rolled truffles on a parchment-lined baking sheet, spacing about 1 inch apart. You should have 24-28 truffles.
7. Refrigerate truffles for 15-20 minutes until firm.
8. Melt white chocolate with coconut oil in a microwave-safe bowl, heating in 30-second intervals and stirring between each until completely smooth.
9. Using a toothpick or dipping fork, dip each chilled truffle into melted chocolate, turning to coat completely.
10. Tap gently on bowl’s edge to remove excess chocolate, then return to parchment paper.
11. Optional: Immediately sprinkle with cinnamon-sugar before chocolate sets.
12. Let coated truffles set at room temperature for 15 minutes, or refrigerate for 5 minutes for faster setting.
13. Remove from refrigerator 10 minutes before serving for best texture and flavor.
Notes
Cream cheese MUST be fully softened to room temperature for smooth texture—plan 45 minutes for this.
Graham cracker crumbs should be very fine, like sand, for the creamiest texture.
The 15-20 minute chill time before coating is crucial—it prevents truffles from falling apart.
Store in an airtight container in the refrigerator for up to 7 days with parchment between layers.
Freeze uncoated truffles for up to 3 months. Thaw overnight in refrigerator, then coat.
For dairy-free version, use vegan cream cheese and vegan white chocolate chips.
Slightly damp hands prevent sticking when rolling truffles.
These taste even better after 24 hours as flavors meld together.
