Description
Boozy, chocolatey, and irresistibly rich these no-bake cherry bourbon balls combine crushed cookies, bourbon, and sweet maraschino cherries for a decadent bite-sized holiday treat.
Ingredients
1 1/2 cups vanilla wafer crumbs (about 45 cookies)
1 cup finely chopped pecans
1/2 cup powdered sugar
1/4 cup cocoa powder
1/3 cup bourbon
2 tbsp maraschino cherry juice
1/2 cup finely chopped maraschino cherries
1/4 cup honey or corn syrup
Powdered sugar or cocoa powder, for rolling
Instructions
1. In a large bowl, combine crushed vanilla wafers, pecans, powdered sugar, and cocoa powder.
2. Add bourbon, cherry juice, chopped cherries, and honey. Mix until a thick dough forms.
3. If the mixture seems too dry, add a teaspoon or two of extra cherry juice or bourbon.
4. Chill the dough for 15–20 minutes to firm up slightly.
5. Roll into 1-inch balls, then roll each ball in powdered sugar or cocoa powder to coat.
6. Place on a parchment-lined tray and refrigerate for at least 2 hours before serving to allow flavors to meld.
Notes
Store in an airtight container in the refrigerator for up to 2 weeks.
For a non-alcoholic version, substitute bourbon with apple or cherry juice.
These taste even better after a day or two as the flavors develop.
