A delicious stir-fry featuring tender chicken, crunchy broccoli, and savory mushrooms, perfect for quick weeknight dinners.
Ingredients

- 500g chicken breast, diced
- 2 cups broccoli florets
- 2 cups mushrooms, sliced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 tsp cornstarch + 2 tbsp water (for slurry)
- Salt and pepper to taste
Instructions
- Cook the rice according to package instructions and set it aside.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Sauté the diced chicken with a sprinkle of salt and pepper until it’s cooked through, about 5-7 minutes. Remove the chicken from the pan and set it aside.
- Add sesame oil, chopped onions, and minced garlic to the same pan. Sauté until fragrant, about 1-2 minutes.
- Add the broccoli florets and sliced mushrooms. Cook until tender-crisp.
- Return the cooked chicken to the pan and pour in the soy sauce. Mix well.
- Prepare a cornstarch slurry by mixing cornstarch with water and stir it into the pan until the sauce thickens slightly.
- Serve hot over rice and enjoy!
Notes
Garnish with sesame seeds or green onions for added flavor. Pair with steamed greens for a complete meal.
