Description

A delicious stir-fry featuring tender chicken, crunchy broccoli, and savory mushrooms, perfect for quick weeknight dinners.


Ingredients

  • 500g chicken breast, diced
  • 2 cups broccoli florets
  • 2 cups mushrooms, sliced
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • Salt and pepper to taste

Instructions

  1. Cook the rice according to package instructions and set it aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Sauté the diced chicken with a sprinkle of salt and pepper until it’s cooked through, about 5-7 minutes. Remove the chicken from the pan and set it aside.
  4. Add sesame oil, chopped onions, and minced garlic to the same pan. Sauté until fragrant, about 1-2 minutes.
  5. Add the broccoli florets and sliced mushrooms. Cook until tender-crisp.
  6. Return the cooked chicken to the pan and pour in the soy sauce. Mix well.
  7. Prepare a cornstarch slurry by mixing cornstarch with water and stir it into the pan until the sauce thickens slightly.
  8. Serve hot over rice and enjoy!

Notes

Garnish with sesame seeds or green onions for added flavor. Pair with steamed greens for a complete meal.
