Description

A quick and delicious mushroom and tofu stir-fry, perfect for busy weeknights.


Ingredients

  • 14 oz firm tofu, cubed
  • 8 oz mushrooms, sliced
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Optional: assorted vegetables (bell peppers, broccoli, etc.)

Instructions

  1. Press the tofu: Start by pressing the tofu for about 15 minutes to remove excess moisture.
  2. Heat the oil: In a skillet over medium-high heat, add the vegetable oil and cook the tofu cubes until golden brown for about 5-7 minutes.
  3. Sauté the mushrooms: In the same skillet, add the sliced mushrooms and any additional veggies, stir-fry for about 5 minutes.
  4. Flavor it up: Add the minced garlic and grated ginger, cook for another minute until fragrant.
  5. Combine everything: Return the browned tofu to the skillet, pour in the soy sauce, stir for about 2 more minutes, then serve hot.

Notes

For a complete meal, serve over rice or noodles and add sesame seeds or green onions as garnish.
