Ingredients

  • 14 oz firm tofu, cubed
  • 8 oz mushrooms, sliced
  • 2 cups mixed vegetables (e.g., bell peppers, broccoli, snap peas)
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a skillet or wok over medium-high heat.
  2. Add the cubed tofu, season with salt and pepper, and cook until golden brown on all sides, about 5-7 minutes.
  3. Toss in the minced garlic and grated ginger; sauté for 1 minute until fragrant.
  4. Add the sliced mushrooms and mixed vegetables; stir-fry for 3-5 minutes until tender.
  5. Pour in the soy sauce and mix well, cooking for another 2 minutes.
  6. Serve hot over rice or noodles.

Notes

For added flavor, garnish with sliced green onions or sesame seeds. Can be customized with different proteins or vegetables.
