Description
Mujadara is a traditional Middle Eastern comfort dish made with lentils, rice, and deeply caramelized onions simple, earthy, and incredibly flavorful.
Ingredients
1 cup brown or green lentils, rinsed
3/4 cup long-grain or basmati rice
3 large onions, thinly sliced
4 tbsp olive oil
3 cups water or vegetable broth
1 tsp cumin
1/2 tsp allspice
Salt and pepper to taste
Fresh parsley for garnish
Optional: plain yogurt or lemon wedges for serving
Instructions
1. In a medium pot, add lentils and 3 cups of water or broth. Bring to a boil, then simmer for 15 minutes until slightly tender.
2. While lentils cook, heat olive oil in a large skillet over medium heat.
3. Add sliced onions and cook slowly, stirring often, for 20–25 minutes until deep golden brown and caramelized.
4. Remove half the onions and set aside for topping.
5. Add rice, cumin, allspice, salt, and pepper to the pot with lentils. Stir gently.
6. Cover and simmer for 20 minutes, or until rice and lentils are tender and liquid is absorbed.
7. Fluff with a fork and top with reserved caramelized onions.
8. Garnish with parsley and serve warm with yogurt or lemon.
Notes
For extra flavor, toast the rice in olive oil before adding to the lentils.
Use fried onions for a crispy topping.
