Description
Roasted Moroccan-spiced cauliflower drizzled with a creamy tahini-honey sauce a perfect balance of savory, nutty, and slightly sweet flavors for a healthy side or light main dish.
Ingredients
1 large head cauliflower, cut into florets
2 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp ground coriander
1/4 tsp cinnamon
1/2 tsp salt
1/4 tsp black pepper
3 tbsp tahini
1 tbsp honey
1 tbsp lemon juice
2–3 tbsp warm water (to thin sauce)
Fresh parsley and toasted sesame seeds for garnish
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large bowl, toss cauliflower florets with olive oil, cumin, paprika, coriander, cinnamon, salt, and pepper.
3. Spread evenly on the baking sheet and roast for 25–30 minutes, flipping halfway through, until golden and tender.
4. In a small bowl, whisk together tahini, honey, lemon juice, and warm water until smooth and pourable.
5. Arrange roasted cauliflower on a platter and drizzle generously with the tahini-honey sauce.
6. Garnish with chopped parsley and sesame seeds before serving.
Notes
For extra heat, add a pinch of cayenne pepper to the spice mix.
Swap honey for maple syrup for a vegan option.
Serve over couscous or quinoa for a more filling meal.
