Description
This Monterey Chicken Spaghetti recipe is creamy, bold, and loaded with juicy chicken and melted Monterey Jack cheese. It’s a comforting, crowd-pleasing dish made in just one skillet and finished in the oven.
Ingredients
1.5 lbs boneless chicken thighs or breast, sliced
1 tbsp olive oil
Salt & black pepper to taste
1 tsp smoked paprika
1 tsp onion powder
1 tbsp lemon juice
1 tsp garlic powder
Pasta & Sauce:
8 oz spaghetti, cooked al dente
3/4 cup cream cheese or 1 cup heavy cream
1 ½ cups shredded Monterey Jack cheese
2 cloves garlic, minced
1 tbsp olive oil
Instructions
1. Season and marinate chicken with spices and lemon juice for 15 minutes.
2. Cook pasta to al dente and set aside.
3. Sear chicken in olive oil until golden and cooked through. Set aside.
4. In the same pan, sauté garlic in oil, then add cream cheese or cream.
5. Stir in Monterey Jack cheese until melted and creamy.
6. Toss in cooked spaghetti and chicken. Mix to coat.
7. Transfer to oven-safe dish, top with more cheese, and bake at 375°F for 10–12 minutes.
8. Let rest for 5 minutes before serving.
Notes
Substitute cream cheese with ricotta or sour cream.
Use gluten-free pasta for dietary needs.
Top with fresh parsley or red chili flakes before serving.
