Instructions

1. Preheat oven to 350°F and line mini muffin tins with paper liners

2. Sift together flour, sugar, cocoa powder, baking soda, and salt in large bowl

3. Whisk warm water, oil, vinegar, and vanilla in separate bowl until combined

4. Pour wet ingredients into dry ingredients and mix just until smooth

5. Fill mini muffin cups ¾ full with batter using cookie scoop for even portions

6. Bake 12-15 minutes until toothpick inserted in center comes out with few moist crumbs

7. Cool in pans 5 minutes, then transfer to wire racks to cool completely
