Description
Mini Pineapple Upside-down Cheesecakes are creamy, tropical, and easy to make with caramelized pineapple and a rich cheesecake base.
Ingredients
1 cup graham cracker crumbs
3 tbsp melted butter
6 pineapple rings or chunks
2 tbsp brown sugar
8 oz cream cheese, softened
1/3 cup sugar
1 egg
1 tsp vanilla extract
Instructions
1. Preheat oven to 325°F and spray a muffin tin.
2. Place 1 tsp brown sugar and a pineapple piece in each muffin cup.
3. Mix graham crumbs with butter and press into cups.
4. Beat cream cheese, sugar, egg, and vanilla until smooth.
5. Spoon filling over crust and pineapple.
6. Bake 18–20 minutes until set.
7. Cool 10 minutes, then refrigerate for 2 hours.
8. Invert before serving.
Notes
Use silicone muffin molds for easier release.
Top with whipped cream, caramel, or toasted coconut for garnish.
