Description

Crispy, cheesy, and packed with Mediterranean flavor, this grilled cheese uses spinach, olives, and sun-dried tomatoes for a bold twist on a classic.


Ingredients

2 slices sourdough or multigrain bread

1/2 cup baby spinach

1/4 cup shredded mozzarella

2 tbsp crumbled feta

1 tbsp sliced sun-dried tomatoes

1 tbsp chopped kalamata olives

1 garlic clove, minced

1 tbsp olive oil

1 tbsp butter


Instructions

1. Sauté garlic in olive oil, then add spinach until wilted.

2. Butter one side of each bread slice.

3. Layer cheese, spinach, olives, and tomatoes between bread slices.

4. Grill each side in a skillet over medium heat until golden brown and melty.

5. Let rest 1–2 minutes, then slice and serve.

Notes

Try adding roasted red peppers or crushed red pepper flakes for variation. Use vegan cheese to make this dairy-free.
